Crispy Baked Chicken Nuggets

INGREDIENTS

  • 1 package pastured-raised Chicken Breast, cut into 1” cubes
  • 2 eggs
  • 2 Tbsps milk of choice
  • 1 1/2 cups breadcrumbs (or quinoa flakes - found at Natural Grocers)
  • 1 tsp salt
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • Olive Oil Cooking Spray

 

DIRECTIONS

  1. Preheat oven to 400 degrees F. Line a baking sheet with foil and put an oven-safe wire rack on top. This will ensure your nuggets get crispy. (Or, if you have an air fryer feel free to use). Prep your chicken by chopping into 1” cubes. Set aside.
  2. Whisk egg and milk together into a bowl.
  3. In a separate bowl, combine breadcrumbs and seasonings.
  4. Make your nuggets! Using tongs (I mean, I used my hands but it’s up to you) dredge chicken cubes into egg mixture and then into breadcrumb mixture, coating thoroughly. Place on wire rack.
  5. Once all the chicken is coated, spray the tops with olive oil spray.
  6. Bake in the oven for 15-20 minutes (mine took 15, check with a meat thermometer and cook until 165 degrees F).

Enjoy with your favorite dipping sauce, or on top of a yummy salad.
