
Dirty Rice
INGREDIENTS
- 1 LB Grass-finished Ground Beef, Primal Ground Beef, Pasture-Raised Ground Pork or Ground Pan Sausage
- Holy Trinity: Mince 1 medium onion, 2 celery stalks, and 1/2 green bell pepper for the Cajun "holy trinity"
- 2 cloves garlic, minced
- 1 bay leaf
- 3 tsp cajun seasoning (or TO TASTE - especially when using the Seasoned Pan Sausage)
- 3 cups Chicken Bone Broth
- 1 1/2 cups long grain white rice, uncooked
- 1/2 cup green onions, chopped
- Dried Parsley
DIRECTIONS
Cook ground meat in a pan with a lid (dutch oven, or deeper sauce pan) over medium heat. Halfway through cooking add the Holy Trinity (onion, celery, & bell pepper) and cook until meat is no longer pink and veggies have softened. Add garlic at the end and saute for 60 seconds. Stir in the cajun seasoning (optional) and bay leaf. Add chicken broth and rice. Stir to combine and bring to a boil.Â
Once it hits boiling, reduce to a low heat and simmer with the lid on for 20 minutes, until the liquid is gone and the rice is cooked. Chop up your green onions while you wait. Once your "Dirty" Rice is cooked, toss in your green onions and stir. Garnish with dried parsley.
Enjoy with a fresh salad or corn bread.Â
