Taquitos

Any-Meat "Taquitos"

INGREDIENTS

  • 1 LB cooked meat (Shredded Chicken, Ground Chicken, Ground Beef, Ground Pork, Shredded Pork, Shredded Leftover Beef Roast)
  • 1/2 Cup favorite salsa
  • 1 cup Shredded Triple Cheddar Cheese
  • 10 - 20 Tortillas of Choice (size will determine how many you need)
  • Sour Cream, Queso, Guacamole, and/or Salsa for dipping (optional)

DIRECTIONS

  1. Preheat oven to 375 degrees F. Lightly spray a baking sheet with cooking oil, or lay down parchment. 
  2. In a bowl combine cooked meat, salsa, and shredded cheese. Stir until mixed well. 
  3. Warm your torillas so they don't crack. 
  4. Dish out 2T or up to 1/4 cup meat (depending on tortilla) and place along one side of the tortilla. Roll tortilla tightly and place seam-side down on the baking sheet. Repeat until the meat mixture is gone and you've got your taquitos lined up in the pan. 
  5. Bake for 10-15 minutes, and be sure to watch them as the edges tend to brown quicker and you don't want burned taquitos! These are not super crispy, but should have a nice crunch and the cheese should be melty. 
  6. Let cool for a few minutes before dipping in your favorite tex-mex dip!
