ETX Green Onion Fritters

Ingredients

  • 2 eggs
  • 1/2 cup water
  • 1 T baking powder
  • 1/2 cup all purpose flours
  • 1/4 cup grated parmesan cheese
  • 1 tsp Natures Own Seasoning (or choice of seasoning)
  • 3 cups chopped green onions
  • Spray oil 

 

Directions

Combine eggs and water until thoroughly beaten. Add the flour, baking powder, seasoning, and parmesan cheese and mix until smooth. Fold in the chopped green onions. 

Heat a skillet over  medium heat, then spray on some oil when ready to cook. Drop a 1/4 cup scoop of batter onto the hot skillet. 

Cook 1-2 minutes on the first side until the sides are firm, the top is bubbling (kinda like a pancake) and the bottom is browned. Flip and cook on the other side 1-2 minutes until browned and cooked through. 

Makes about 8 fritters.
